Weekend Catch Up!

Happy Monday!

Yesterday was awesome! I went to a nursing home with a group from my church and we sang for a few people there and prayed for them, which sounds depressing but it is always an uplifting experience for me. Us singing makes such a difference for the people there, and they are always so thankful and sweet!

After church we had a meal celebrating our new building recently being paid off (yay!), and I ate mostly vegetables, with a bite or two of macaroni and cheese (of course!). When my church has covered dish meals, ya’ll they are just the best. We have so many amazing home cooks! There were tons of cute and delicious desserts in the shapes of bunnies and such…. and I had self control this time! I only ate a bite or two of 3 desserts…I couldn’t pick just one! Usually I would pile my plate high and eat it all, and maybe even go back for seconds. But not this time, I learned my lesson with my birthday weekend!

After church I had some cuddle time with Garrett before he went to work, and then I got in a great 45 minute yoga video and a green smoothie. Perfect Sunday! 🙂

Today I got in a T25 workout and another green smoothie. And, I’m happy to say my knee is giving me a lot less trouble. I foam rolled again today, so hopefully it’s helping???

Saturday Weigh In

Happy Saturday!

Today I weighed myself, and I must say I am a bit disappointed. No weight loss, so I’m still at 158 lbs. Oh well, after last weekend’s terrible eating I wasn’t really surprised. But I am a bit down about it. I just have to remember the number on a scale does not equal my worth!

I also have to be proud of myself for the progress I have made… I put on a dress today that I haven’t worn in months and it was considerably looser! Small victories! 🙂

This coming week I will just try very hard to stay on my healthy eating plan and tracking my calories- especially since Easter is coming up and I have a dress I would really like to look nice in! I am also planning on finishing up my last week of T25, and I’m going to continue to do foam rolling and see if it helps my knee!

Most delicious green smoothie ever!!!

Happy Friday!!

I am super excited today because Garrett is coming home from training! I have enjoyed being alone this week to do whatever I wanted, and mostly be lazy, but I am really looking forward to having my husband back.

Yesterday I got a T25 workout in, and I tried out my new foam roller. It was definitely tougher to do than I thought it would be, and actually was a bit painful on really tight muscles! So far I have not noticed a difference in my knee pain, it’s still there. But hopefully after a week or so of foam rolling a few times a week I will see a change. I had to go to Virginia Beach yesterday for a class for work, and I had my lunch all planned out. I was going to stop at Wendy’s with my coworker (who only likes fast food/plain American food) and get an Asian Cashew Salad. But, alas, the one we were going to stop at has been knocked down! So we had to go to McDonald’s across the street as we were very low on time… and this one had NO SALADS. Ugh! I was starving so I got a chicken sandwhich and fries, and felt pretty icky afterwards. Oh well, we make plans but sometimes life gets in the way.

Yesterday evening I made a sweet potato scramble and it was delicious!


Sortof like my Sweet Potato Skillet but scrambled! It was 1/2 sweet potato, 2 eggs, paprika, garlic powder, 1/4 cup turkey sausage, salt and pepper, and Sriracha hot sauce. Yum!

This morning I did a double T25 workout and I am now done with week 4 of Beta… only 1 week left! I am sorry to see T25 go but I am also kindof happy to try some new things. I really really hope my knee gets better because I HATE not being able to run!

This morning I had a post workout green smoothie, and y’all, it was the best green smoothie I have ever had. From a restaurant or my own kitchen!


This smoothie had:

1 cup frozen pineapple, 3 ice cubes, 2 cups spinach, 1/2 banana, 1/2 scoop vanilla protein powder, 1 cup almond milk, 1/2 cup water, 1/2 tsp vanilla, pinch truvia, 1/4 cup plain greek yogurt

Blend it all together and you get an awesome start to your day! It was so tasty, I think the only thing you can really taste is the pineapple and the vanilla flavors. Delicious!

Sore knee… ouch!

Hey everyone! The last couple of days I’ve been doing GREAT with my eating habits, I’ve been keeping my calories low but have still been satisfied! Yay!

I’ve been doing T25 workouts still, though I am a little disappointed that my knee is still bothering me so much. I really wanted to go for a run yesterday after my ab video but my knee was just really hurting, so I decided to listen to my body. I did some yoga instead. Even just walking a few blocks to get my car from the shop wasn’t too comfortable, so I need to do something! I’m thinking about getting a foam roller and using that a few times a week and see if it helps my knee pain. I just hate not being able to go out and run in this wonderful weather!

I’ve been slacking on recipes lately, sorry!

I had an awesome salad for lunch today though!


My chipotle chicken salad had: 1/2 baked chipotle marinated chicken breast, 1/8 cup cheddar cheese, light ranch dressing, 1 roma tomato, some broken up tortilla chips. Yum! I will probably have this as a wrap some time this week too!

Garrett has been gone all week for training, so it’s just been me and my cat Chloe… and she can be a little antisocial.


Hahaha! But she does make better company than none at all! Happy Wednesday! 🙂

Saturday Weigh in and Birthday Celebrations!

Happy Monday!!

Saturday I did my usual weigh in and praise the Lord, another pound down! That makes a total 7 lbs lost since I started T25. Yaaaay!

Saturday was my 27th birthday, and I started the day off with a veggie omlette, and then Garrett and I went canoeing at Merchant’s Millpond.


Garrett always says he hates canoeing, so I can only get him out there on the water when it’s my birthday! Though, he doesn’t seem to mind it too much once we get out there. And we saw an alligator!! I have never seen one in the wild and it was awesome!

Then we went to Norfolk and saw Cinderella… ladies, this is an amazing movie. If you are or have ever been a Cinderella fan, you have to see it! It is truly magical! 🙂

After that Garrett, my sister, her fiance and I went to Freemason Abbey for dinner. The drinks were AMAZING!


The appetizers were great too, but my entree I was not too impressed with. It was good and we had a great experience, but I kindof doubt we will go back. They did give me a free Freemason Abbey glass since it was my birthday though!

Garrett also made me a birthday cake (which he did not allow me to take a picture of) and gave me earrings and a necklace! Plus he me an iPhone 6!!! I have such a sweet husband!

Then Sunday my sister and I did a Doodles & Dots painting class at church, which was so fun!


The painting part is fun, but it was even more fun just spending time with other women talking and having fun!

Now, on to the less happy part of my weekend… my health and fitness journey took a step back this weekend. 😦 I did not do well at all with healthy eating. I ate even worse on Sunday than I did on Saturday! I ate WAY too much birthday cake and didn’t get in hardly any fruit or vegetables at all. But I did get right back into it today, and did a T25 workout and had a green smoothie. I plan on eating as clean as possible all week so make up for my 2 days of eating terribly! Also, as a cherry on top I felt really really sick this morning from all my unhealthy eating. I still got through my workout but I was not feeling very good. I am definitely disappointed in myself but hey, I knew I would stumble occasionally. The important thing is that I’m picking myself back up and getting right back into my healthy eating and fitness routine!

Garrett is gone for training all week, so I will have plenty of time this week to cook, work out, and hopefully even clean the house more than usual! Have a great week! 🙂

Blackberries & BBQ!

Happy Friday! This morning I got in a double T25 workout, yay! I always dread having to do two in one day but I tell ya, I really get an amazing feeling of accomplishment. I had a well deserved green smoothie afterwards!

To continue Blackberry Palooza, I had probably the best salad I have ever eaten. And I have eaten A LOT of salads in my 26 years… (going to be 27 tomorrow!) This salad hits all the awesome parts of your tongue- sweet, salty, and sour. It is just amazing and after I give you the recipe you have to make it, pronto!!


Blackberry Bacon Salad with Honey Balsamic Dressing

Ingredients: 3 slices crumbled bacon, spinach, 1/4 cup blue cheese crumbles, 1 sliced green onion, 1/2 cup blackberries

Dressing: 1/3 cup olive oil, 1/3 cup balsamic vinaigrette, 2 tbsp honey, 1/2 tsp dried basil, 1/2 tsp cinnamon

The dressing recipe makes enough for several salads for me, I only used about 1-2 tbsp of dressing on my salad.  Although all these ingredients sound like they wouldn’t go together, I thought it was amazing! My salad came to about 427 calories, most of which come from the bacon. The original recipe called for turkey bacon, but I just cannot seem to make myself like it! I have really tried, on more than one occasion, but it just doesn’t compare to the real thing! 😦

Last night, I also tried something new, that every southern girl probably tries at least once: barbecue.


I made homemade bbq for the first time ever, and it was definitely a success! Plus it is so easy, and way cheaper than buying it from a restaurant! And I know eating things like bacon and bbq aren’t necessarily “healthy”, but in small portions I think most anything is permissible. Eating these sorts of things in moderation keeps me from going crazy on a weak day and ordering a baconator!

Blackberry Palooza!

Hey everyone! So I went grocery store shopping last night and to my delight I saw that blackberries were on sale! Yay springtime!! This is a berry that is very low in calories and very high in antioxidants, so I’m trying a few new recipes with blackberries this week. Last night, I made blackberry baked oatmeal (it was awesome!).


Ingredients: 1/3 cup mashed blackberries (can be any kind of fruit), 1/2 cup oatmeal, 1/4 tsp vanilla, 1 tbsp vegetable oil, 2 tbsp cashew milk (or any kind), pinch salt, pinch truvia, lite cool whip for topping

Mix together everything but cool whip and pour into ramekin. Place ramekin in cold oven and turn up to 375, cook for about 26 minutes. Top with lite cool whip if desired! This meal came to 317 calories. And it makes your house smell amazing!

This morning I got in a T25 workout (with the 10 lb weights again… ugh!), and then had a blackberry pineapple smoothie! Thinking back now I could have probably added some spinach, I will probably do that next time I make this. Pineapple and blackberries go together so well, I can’t believe I haven’t had this combination before. So good! I sprinkled the top of mine with chia seeds for an extra boost of fiber and healthy fats!


Ingredients: 1 cup frozen pineapple, 1/2 cup blackberries, 1 cup cashew milk (or any kind), 1/2 cup water, 2 icecubes, 1/2 cup plain greek yogurt, 1 tbsp honey, pinch truvia, 1/2 tbsp chia seeds (optional)

Absolutely delicious! And my smoothie came to 321 calories, which makes it taste even sweeter. 🙂
