Morning Run, Chocolate Raspberry Smoothie and Trail Mix!

Good morning! I went for a 3 mile run this morning, and I have a little secret.

I really REALLY didn’t want to.

But I put my big girl pants on, and went out anyway. I wore my half marathon shirt from November, and was pleased to see that it was A LOT looser than when I ran in it, so that gave me a little boost to get my butt going! I got caught in a light drizzle around mile 1, and by the end of mile 2 I was in a downpour! At first I really enjoyed it, but by the end I was very cold, and very wet!

After my run I had a delicious Chocolate Raspberry Smoothie! As always you can change the fruit for something else- I have had this with strawberries or cherries instead of raspberries. They’re all good!

Chocolate Raspberry Smoothie

Ingredients

  • 1/4 cup plain greek yogurt
  • 1/2 scoop chocolate protein powder
  • 1 tbsp cocoa powder
  • pinch truvia
  • 1 cup raspberries
  • 1 cup light almond milk
  • 1/2 frozen avocado
  • 2 cups spinach
  • 1/2 cup water

Blend until smooth and enjoy! I LOVE this smoothie because it’s so rich and creamy- one of those smoothies that honestly don’t taste healthy. It tastes like dessert! It’s almost 400 calories, so it’s kindof a lot. But it’s full of awesome things like fiber, protein, and calcium to keep me going the rest of the day.

Last night I made some trail mix for mine and Garrett’s road trip coming up. I know there are tons of trail mixes out there but I never like them! They’re always mostly peanuts and I don’t like peanuts that much, so I made my own!

I mixed together: 1 cup M&Ms, 1 cup raisins, 1 cup cashews, and 1 cup Bare Naked Vanilla Granola. Per 1/4 cup serving, this is 158 calories.

I realize this isn’t super healthy, but to me it is much better than eating a lot of junk food. Typically on a road trip, I would have loaded up on crackers, chips or oreos. When shopping for road trip food last night, I think I had A LOT of restraint not getting snack cakes and cookies instead of granola and nuts!

At least I know a serving of this will keep my husband and I full and not reaching for something like a candy bar or chips!

Strawberry Baked Oatmeal and Yoga

Good morning! Today I got in some yoga. My back is still not quite right so I didn’t want to do anything really difficult, so I did a couple of yoga videos to get myself all stretched out and feeling awesome! This is one of them:

I am by no means a yogi. I enjoy yoga very much, but I am definitely not great at it! If you have never tried yoga, or you are a beginner, I highly recommend Yoga with Adrian. She has tons of free videos on youtube and she has them for all levels. I do at least one of her videos every week- usually several a week! Plus she’s quirky and funny which keeps it from being boring. 🙂 Can you tell I’m a little obsessed?! I follow her on instagram too, haha!

Ok, now on to the oatmeal recipe! Last night for dinner I made myself some awesome baked oatmeal.

Not only is it delicious, it makes your house smell awesome!

Strawberry Baked Oatmeal

Ingredients

  • 1/2 cup oatmeal
  • 1/4 cup (or more) of mashed strawberries
  • 1 tbsp oil
  • about 1/4 cup milk (depending on how firm you like it)
  • 1/4 tsp vanilla
  • pinch truvia
  • light whipped cream for topping

Mix all ingredients together, pour into greased ramekin. Place in cold oven, and bake at 375 for 26-28 minutes. I like my oatmeal to be a bit wet, I don’t enjoy it when it’s really firm and dry. You can put in less milk if you would like it to be more firm. I let mine cool for about 15 minutes, dump it onto a plate, and add light whipped cream! This came to 327 calories. Yaaay! 🙂

You can make this oatmeal with just about any fruit, I’ve made it with blackberries and also peaches. Perfect if you have a sweet tooth and you want to take care of it with something healthy!

Mango Avocado Smoothie and a Workout!

Thank the good Lord, I was FINALLY able to workout this morning! My back is still feeling a little tight, but I was able to get in a great hour long dance video workout and it felt amazing to get back into my old routine. I was really feeling like I was not myself! Working out in the morning just gives me a pep in my step for the rest of the day! 🙂

After my workout, I had a mango avocado smoothie and it was delicious.

It’s basically the same as my other green smoothie, but with mango instead of pineapple! I have to switch it up all the time, I get bored. Garrett says I have the attention span of a gnat. 🙂

Ingredients:

  • 2 cups spinach
  • 1/4 cup plain greek yogurt
  • 1 cup light almond milk
  • 2 ice cubes
  • 1 cup frozen mango
  • 1/2 avocado
  • 1/2 cup water
  • 1/2 scoop vanilla protein powder
  • 1/2 tsp vanilla
  • pinch truvia

Blend until smooth! This smoothie came to 388 calories. Yum!

Garrett and I are going on our New England trip here very soon, and I was very disappointed about all the stuff going on in Baltimore right now! We have had to change our plans now, so we’re trying to decide on a place to stay instead. I really wanted to visit that city, but it is just too dangerous right now! Thankfully I got a refund on our hotel so we’re not in trouble over losing money. It’s just a sad situation- I am really thinking about and praying for all the people affected there. Hopefully we can visit that city another time in the future.

Saturday Weigh In and Breakfast

Happy Saturday!

I weighed myself this morning, with hopes to not have gained a pound this week since I haven’t been able to work out any due to an injury. Well color me surprised, I lost a pound this week! Yaaay! That puts me at 154 lbs. 🙂 Although I didn’t work out hardly at all, I did watch my eating closely so I’m sure that contributed to my weight loss.

This morning, I was tempted to eat some of my Dad’s birthday cake that I took home on Thursday. But I asked myself these questions:

Will it nourish my body? No.

Will it make me feel good? Yes, but only for about 30 seconds.

So, I made a choice to eat something that would nourish me and make me feel full for hours instead of giving into temptation!

Healthy breakfast

I had: 2 boiled eggs, 1/4 cup sliced strawberries, 1/2 avocado, 1 tsp chia seeds, 1 tbsp honey. Not only does it make a pretty plate, but it had tons of nutrients my body needed this morning to get me going, and it was all 342 calories. Probably about the same amount of calories for a small piece of cake.

Yay for small victories! 🙂

Chicken Nacho Salad and Rest Day(s)

Happy Friday! I never thought I would say this, but I REALLY miss working out. Yesterday I tried some yoga to see if it helped my back, and sadly it had no effect. If anything I was in more pain during the yoga than I would have been if I hadn’t done any. UGH. So, I took a rest day today, and will be taking one every day until my back decides to join the party.

I honestly hate this! I wanted to go for a run this morning so terribly. I think it is unlikely that I will lose any weight this week since I haven’t been able to work out. I can totally see how people start to get really down when their bodies are not functioning the way they should be. Oh well, at least I can still eat healthy!

Yesterday I cooked 3 chicken breasts in the crockpot all day, with 2 cans of Rotel and some taco seasoning. If you shred it, you get this awesome versatile shredded chicken you can use on anything!

Nacho Chicken Salad

Today for lunch, I put mine on a salad with: romaine, 1/8 cup cheese, 2 tbsp light ranch dressing, 1/2 avocado, and crushed tortilla chips. Garrett eats this chicken as nachos or a wrap. It’s so good, and so easy!

It’s funny how my taste has changed. I used to hardly ever eat salads, and I used to HATE avocados. Now they’re my favorite fruit (or vegetable?)! They have healthy fats, which I seem to have a hard time getting enough of. Also as a byproduct, I seem to have much clearer skin when I eat avocados. Yay!

Healthy Chocolate Chip Cookies

Good morning! Yesterday I took another rest day… ugh I know, slippery slope! However, I got right back into working out this morning and I did the 21 Day Fix Total Body Cardio. I don’t know if this has happened to anybody else, but I think I really strained my lower back doing that video! Oh well, I strained my glutes when I started T25, so maybe it’s just going to happen occasionally when I’m really trying to train hard. I think some yoga will be on the agenda tomorrow for sure!

As I am trying to keep my blog as open and honest as possible, I have a confession to make:

I ate several chocolate chip cookies yesterday. And they were DELICIOUS! Yesterday I got a craving for something sweet, so I decided to whip up something that would satisfy my sweet tooth without making me feel icky afterwards. Plus, I had everything in my kitchen that I needed for this recipe. It doesn’t even call for eggs!

At about 70 calories a cookie, you can’t beat that with a stick. There were 10 cookies here… hmm…

Healthy Chocolate Chip Cookies

Ingredients

  • 1/3 cup plus 1/4 cup all purpose flour
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup mini chocolate chips
  • 2 tbsp brown sugar
  • 2 tbsp sugar
  • 1/2 tsp vanilla
  • 1 tbsp vegetable oil
  • 4 tbsp milk (any kind)

Preheat oven to 375. Mix first 6 ingredients in a medium mixing bowl. Put in remaining ingredients and mix again. Drop cookies onto greased cookie sheet using a tablespoon, and bake for 6-7 minutes or until golden brown on the bottom. They will be slightly underdone when you pull them from the oven. Let cool on the baking sheet for about 3 minutes, and move to a cooling rack. Mine made 10 cookies.

Can you believe they’re only 70 calories each?! And believe me, they do not taste healthy at all. Have a healthy happy day y’all! 🙂

Color Me Rad 5K!!!

If you have ever thought about doing a Color Me Rad 5K but you think “Well maybe it’s over rated, maybe it really isn’t that much fun”, you need only to look at my face to know the truth:

It was LITERALLY the most fun I have ever had running! It’s basically a free-for-all to act like kids! Throw colored powder and buckets of neon gel on absolute strangers! It is not only acceptable, it is expected! In my opinion, this is the ultimate in making fitness fun. We had several people in our group that HATE cardio, and they had a blast running with everybody else for 3 miles! And at the end we all said the same thing- it didn’t even feel like 3 miles. I wanted to run it again!

Now, I will admit I didn’t run as much as I would have liked. There were so many people there that it made it hard to run around everyone. And in some places, the path was so narrow it would have been a bit dangerous to run around all those people. That being said, it was still the most fun I have ever had running. Our team was called “Do or Dye” and we had our own t shirts made, thanks to my brilliant sister!
