Hey guys! I made this amazing honey kale salad last week. I know, I’ve been going crazy with the kale lately, but it’s so good for you and there are so many things you can do with it!
Honey Kale Salad
Ingredients: 1 bunch kale, 2 tbsp cashews, 2 tbsp diced onion, 1/2 cup halved red grapes, 1 chopped roma tomato, 1/2 tbsp olive oil, 1/2 tbsp lemon juice, 1 tbsp honey
Tear kale into pieces removing large stems. Massage with lemon juice and olive oil for a few minutes and let marinate for at least 10 minutes. Add in everything else, drizzling honey over the salad. Toss, and then eat! Yum! My salad came to about 340 calories. Delicious!
