Creamy Garlic and Spinach Pasta

This is one of mine and Garrett’s favorite recipes to make, and it is very easy! Now, I will not say that this is a super healthy meal. But, if you eat it in moderation with a salad (which is what I usually do), it can make a great meal to go in your weekly rotation! Plus it is absolutely delicious, it will make your house smell like Olive Garden. 🙂

Creamy Garlic and Spinach Pasta


  • 1 head garlic with end sliced off
  • olive oil
  • 3 cups shell pasta
  • 1 lb italian sausage (I like to use hot)
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk
  • 3 cups chopped spinach (or more!)
  • salt, pepper, crushed red pepper

Preheat oven to 400. Put garlic in aluminum foil, drizzle with olive oil, seal and roast for 35 minutes. In a sauce pot, melt butter. Add flour and whisk for about 1 minute. Slowly add milk, whisking until thick and creamy.  Add in salt and pepper. Transfer the sauce to a food processor or blender and add roasted garlic cloves (squeeze them out of their skins first). Pulse blender/food processor until the sauce is smooth, keep hot. Start your pasta boiling. Heat a skillet over medium high and brown the sausage, and drain it. Once the pasta is done, toss it with the sauce, sausage and spinach until spinach is wilted. And voila! I serve it with some crushed red pepper. Yummm!

I ate probably 1/2 cup of this, and it came to 413 calories. The recipe makes a lot of food, so the 4 tbsp of butter are really divided up so they don’t add that many calories to one serving. However, if you would like a lower calorie sauce I have made a cauliflower alfredo sauce that would be really good with this! This is the recipe.
