Saturday Weigh in and Skinny Banana Nut Pancakes

This past week I am, again, very proud of myself for working out every day I planned to and for staying within my calorie range all week! However, upon weighing myself this morning I saw that the scale hasn’t moved one bit… what a shocker!! I’m still at 154! Well, I’m just going to keep at it and I know good things will happen. 🙂

Yesterday I tried a new recipe for Skinny Banana Nut Pancakes, and they were AWESOME. These pancakes are: whole wheat, low calorie, sugar free, and oil free! But they are full of flavor and amazingness.

I know I hardly ever post recipes for dinner or lunch, most of them are breakfast! It’s my favorite meal of the day, and I often have it for dinner!

Skinny Banana Nut Pancakes

Ingredients

  • 1/2 mashed ripe banana
  • 1/4 cup light almond milk (or any kind)
  • 1/2 tsp vanilla
  • 1/3 cup whole wheat flour
  • pinch salt
  • 1/2 tsp baking powder
  • 2 tbsp nuts, 1/2 sliced banana, 1/4 cup sugar free syrup for topping (optional)

Combine first 3 ingredients in large bowl, set aside. Combine flour, salt, and baking powder in a small bowl, and then pour into banana mixture and stir. Add more milk if needed. Heat greased frying pan over medium heat and cook pancakes until dry on edges. Flip and cook until done. Top with pecans or walnuts, banana, and syrup!

This whole recipe came to 375 calories, that’s including everything I put on my pancakes too! Plus they’re super easy with very few ingredients. These will be a staple at my house from now on!

Yoga and Raspberry Muffins!

This morning I am really feeling my workouts from the week so far, so I did about an hour of yoga to try to stretch out some of the soreness I’m feeling. After that, I had an amazing breakfast of eggs and raspberry muffins with a protein glaze!

Here’s why: they are whole grain, no oil, no butter, low sugar, AND low calorie. But they taste awesome! Adapted from this recipe.

Ingredients

  • 1 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 3/4 cup sugar and truvia blend
  • 1 tsp cinnamon
  • 1/2 cup almond milk
  • 3/4 cup unsweetened applesauce
  • slightly over 1/2 cup plain greek yogurt
  • 1 egg
  • 2 tsp vanilla
  • 2 cups fresh raspberries
  • glaze: vanilla protein powder, truvia, and almond milk

Preheat oven to 350. Mix flour, sugar and truvia blend, cinnamon, and baking powder in a large bowl. In a separate bowl, mix egg, vanilla, yogurt, and applesauce. Pour wet ingredients into dry ingredients and stir, then add in almond milk and stir again. You may need to add more almond milk depending on how wet the batter is. Then fold in raspberries, and fill lined muffin cups to the top (they don’t rise very much). Bake for 14-16 minutes or until a toothpick inserted comes out clean. This recipe made 20 muffins for me! For the glaze, simply mix about a teaspoon of vanilla protein powder with a pinch of truvia and a few drops of almond milk until it has a glaze consistency, and pour onto a warm muffin!

I honestly could have eaten about 4 of these, they were so good! Make these now, and you will not be disappointed!! 🙂

Taco Salad and Coconut Milk and Banana “Ice Cream”!

Good morning!

Since last week my workout schedule didn’t end in my losing any weight, I have decided this week to step my workouts up even more and work out for about an hour every day. Usually I only do this once or twice a week and the rest of the week I just work out about 30 minutes… honestly an extra 30 minutes a day is NOT that much of a hindrance to my usual schedule so I’m going to see if it helps! I know plateaus happen to lots of other people, so I am not letting this bug me. I am just seeing it as a challenge that will make me stronger and more fit! 🙂 Yesterday I did 21 Day Fix Pilates and Lower Fix. I really enjoyed both, but I am VERY sore today!

I have lately become absolutely obsessed with black beans and corn together… can you believe before I went to Chipotle about a week ago I had never had them together??? Well I had a taco salad for lunch the other day, and it had: Lettuce, 1/2 cup seasoned hamburger, 2 tbsp light ranch, 1/4 cup black beans and corn, 1/2 chopped roma tomato, 5 crushed tortilla chips.

Last night I thought I would experiment with some coconut milk and banana ice cream. I found this recipe on Pinterest and thought I would give it a try since I had some coconut milk I didn’t know what to do with.

It turned out absolutely delicious! I think this will be in my freezer at all times now… it’s such a healthy tasty treat!

Ingredients:

  • 5 coconut milk ice cubes
  • 1 1/2 frozen banana
  • pinch salt
  • pinch truvia
  • 1 tsp vanilla

Blend until smooth in a blender, and refreeze for a little bit if desired. Or eat straight from the blender! Mine came to 180 calories for an entire bowl full. SO. GOOD.

Saturday Weigh in and Oatmeal Chocolate Chip Pancakes!

Good morning!

After last night’s pizza and beer celebrating Garrett’s birthday, I was a little worried about getting on the scale this morning. I weighed myself and…. 154. *angry face*

After a full week of working out hard and eating healthy, I have decided not to let this number bother me. It’s just a number, after all. It does not signify my worth, and it does not make me a failure that it is not going down! I know that if I keep at it, challenging myself with my workouts and eating healthy food the weight WILL come off. I am just not going to worry about it! 🙂

This morning I have an awesome recipe for you! I woke up wanting something filling, and I had plenty of time since I woke up early (I usually make Saturday a rest day so no work out!). I tried a recipe from Chocolate Covered Katie for Oatmeal Chocolate Chip Pancakes!

And they totally hit the spot. Delicious!

Ingredients

  • 1/3 cup all purpose flour
  • 1/3 cup old fashioned oats
  • 1/2 tsp vanilla
  • pinch truvia
  • pinch salt
  • 1 tsp baking powder
  • 1/2 cup of water (or milk)
  • chocolate chips

Mix all dry ingredients, then add in wet and stir. Heat a greased frying pan to medium heat and cook batter, flipping when one side is done and continue to cook until golden brown on both sides.

I had mine with cream cheese mixed with vanilla and truvia, but these would be good with syrup also! To eat this entire recipe is 348 calories (not counting the cream cheese I ate mine with), and these pancakes are extremely filling!

Just Checking In

Happy Friday! I don’t know about you, but the weather here in NC is gorgeous. I thought with all the heat that 50 degree morning were gone, but thank the Lord they aren’t! This morning I got in a 3 mile run in this wonderful weather, and also an ab workout. The ab blasting workout I did this morning was:

  • 20 Side Plank Dips (right side)
  • 20 Sprinter Sit Ups
  • 50 Heel Touches
  • 1 Minute Plank
  • 20 Side Plank Dips (left side)

Do this for 3 rounds! It’s no secret I love running, but you can’t only do cardio. It’s really important to be sure to get in strength training, particularly abs because they protect your lower back.

I am proud to say I have still been keeping up my calorie counting, and I have stayed within my range every day this week! In addition to that, I have also worked out every day. Woohoo! Even if I don’t lose a pound this week, I am happy and proud of myself for sticking to my plan. 🙂 Not only am I feeling awesome about my workouts this week, BUT I am wearing a dress I found at a thrift store today that I absolutely love!

…and I kindof get a high from saving money… lame I know! But a dress that cute for $4?! And how do all these fashion bloggers have such perfect pictures of their ensembles every day? Maybe I should get a selfie stick, haha!

It was some plain greek yogurt sweetened with truvia and vanilla with strawberries and chia seeds, and a fried egg that I cut in half and put each half on a crescent roll…. yeah we’re getting low on groceries so this was the best I could come up with. But it was actually really delicious!

Sunday and a Fit Start to the Week!

Happy Monday!

Yesterday I spent most of the day with my sister, Sydni. It’s important for me to have girl time, because I know my husband doesn’t want to hear me talk about girly stuff all the time! 🙂 We started out at church, and tried to take a couple of selfies before we left…. one turned out good!

Afterwards we went out for lunch at Chipotle.

I forgot how awesome Chipotle food is! I got a bowl with white rice, steak, pico de gallo, salsa, cheese and lettuce. And of course I topped it off with plenty of hot sauce! Delicious!

Later we did some shopping and saw Pitch Perfect 2. I loved it! I don’t think the story was as good as the first one, but I still really enjoyed it!

Yesterday morning I did some pretty challenging yoga for about 45 minutes, and then did a lot of foam rolling. This morning, I got in a 6 Week 6 Pack video and a green smoothie! I am really trying to step up my workouts this week so some days I’m going to work out longer than usual. AND I’m going to attempt to cut back my calories a bit. We’ll see how it goes! This is my workout schedule I’m trying this week:

  • Sunday: 1 hour yoga and foam rolling
  • Monday: 6 Week 6 Pack video
  • Tuesday: 3 mile run, upper body workout, foam rolling
  • Wednesday: 21 Day Fix Pilates
  • Thursday: 21 Day Fix Total Body Cardio
  • Friday: 3 mile run, ab workout, foam rolling
  • Saturday: off!

Hopefully with this plan will get me back to losing at least 1 lb this week. Have a healthy happy week everyone! I’m off to start preparing for my husband’s birthday tomorrow, he turns 29! Pictures to follow for sure! 🙂

Saturday Weigh in and Healthy Cinnamon Roll Pancakes!

This morning I weighed myself and… I weighed 154 lbs. Not gonna lie, I seriously wanted to put up here that I had lost something, but nope. I have been yoyoing around this weight for about 3 weeks so I’m thinking I need to change something up to get back to losing weight again. This week I worked out 3 times instead of the usual 6, and honestly I think I will feel a bit deprived if I narrow my calories down very much. SO, my plan coming up this week will be stepping up my workout regimen, and staying below my calorie count every day. I have been staying around 1500 calories every day, some days less and some days a little more. I do not think that this is bad, I just think maybe I need to be burning more calories in my workouts than what I am currently doing.

I think the days of easy weight loss are over for me- most of my life I have been around 155 lbs so if I want to weigh less than that, I will need to do something new. Tonight I’m going to come up with a workout schedule for the week and I’ll post it soon!

Aaaaand on to the recipe! Last night for dinner I was feeling adventurous and thought I would try out a cinnamon roll pancake recipe that I found here. Y’all, these are SO delicious.

Seriously, I think these are the best pancakes I’ve ever eaten, at IHOP or at home!

And the best part is, I didn’t totally wreck my day of healthy eating! Instead of making 20 or so silver dollar size pancakes, I made 4 medium size ones. I ate two of those pancakes with cream cheese frosting, making my dinner about 400 calories. Similar pancakes from IHOP are 900 calories!

Ingredients for Filling

  • 1 cup dates
  • 1/4 cup milk (any kind)
  • 2 tsp cinnamon

Ingredients for Pancake Batter

  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • pinch truvia
  • 1 cup milk (any kind)
  • 2 tbsp vegetable oil
  • 2 tsp vanilla

Put filling ingredients in food processor and blend until very smooth, this took me about 5 minutes of blending. I actually chopped my dates first and then blended them, but you may not need to. You may need to add more milk to get the dates smooth. Put the mixture into a plastic bag and squeeze all the air out. Snip the end of the bag off to make a piping bag. Set aside while you make the pancake batter.

To make the batter, mix all dry ingredients in a small bowl. Mix all wet ingredients in a medium bowl. Add dry to wet, and stir until combined. Get a frying pan to medium high heat, then lower heat to medium and pour pancake mix onto greased pan. Immediately pipe the date mixture onto the pancake, and cook until the edges look dry. Flip and cook an additional minute. *Note- the date mixture burns very fast so keep an eye on it!

You can serve these with syrup, or with cream cheese frosting. To make my frosting, I heated up 1 oz of cream cheese and mixed it with a little truvia and vanilla. Yum!

I enjoyed these pancakes while I watched the season finale of Vampire Diaries… and I cried the WHOLE TIME. Ugh, Vampire Diaries, you know how to pull on my heartstrings. Does anybody else watch that show? Did you cry like a baby too?!
