Last night Garrett and I made a copycat recipe of Olive Garden’s Zuppa Toscana soup. And it is SO GOOD. It tastes just like the restaurant! Except with way more kale, because I love kale! 🙂
Gotta love a husband that cooks!
Zuppa Tuscana Soup
- 2 slices bacon, chopped
- 3/4 of a vidalia onion, chopped
- 2 cloves garlic, minced
- 3 large potatoes, sliced or cubed
- 1 lb spicy italian sausage, crumbled
- 2 boxes chicken stock
- 3-4 cups kale, or much as desired, torn with stems removed
- 1/2 cup half & half
Cook italian sausage and set aside in a bowl with paper towels. Cook bacon in soup pot until fat has rendered a bit, then add in onions and cook until softened. Add in garlic and cook about 30 seconds or until fragrant. Add in chicken stock (I usually start out with less and as I add more to the pot I add more stock until it’s as soupy as I like) and potatoes, and continue cooking on medium until potatoes are mostly done. Stir in kale, allow it to cook down, and then add in cooked sausage. Cook until kale is done, and stir in half & half.
I usually serve this with crusty garlic bread and salad. If nothing else, it’s a good way to get your husband to eat kale! 🙂 I honestly am not sure how many calories are in this soup. I am going to guess it’s about 200 calories per cup. Enjoy!
