Light Mac & Cheese with Chicken and Broccoli

Lately I have really been scrounging for good dinner recipes that are healthy, filling, and something my husband would eat. Oh, and easy!! Don’t get me wrong, sometimes I really enjoy cooking a fancy dinner that takes hours to prepare. I really enjoy that when I have the time and energy. But most days, I want something that takes 30 minutes or less.

Enter: light mac & cheese with chicken and broccoli.

I have been trying to find new things to cook because most of my old quick standbys are just not healthy. Healthy eating takes time and preparation, but in the end I think it’s totally worth it to feel good about what you are eating. Not to mention getting all the healthy nutrients you can only get from vegetables (which are high on my husband’s I-don’t-want-to-eat-this list).

Not only is this dish simple and easy, it requires no side dishes! It is the perfect one dish meal: starch, vegetables, protein. Yay!!

Light Mac & Cheese with Chicken and Broccoli

Light Mac & Cheese with Chicken and Broccoli

  • 2 oz dry pasta (This was 3/4 cup of shells)
  • 1 large head broccoli, cut into florets
  • 1 medium chicken breast, chopped
  • 3 wedges Laughing Cow cheese, garlic and herb flavor
  • 1 tsp minced garlic
  • 1/4 cup plus 2 tbsp milk
  • 1 1/2 tbsp sun-dried tomatoes, chopped
  • salt and pepper, to taste
  • crushed red pepper (optional)
  • parmesan cheese (optional)

Boil pasta until it has about 3-4 minutes left, then add in broccoli. Drain once both are tender and set aside. While pasta cooks, spray frying pan with cooking spray and cook chicken and garlic over medium heat. Add salt and pepper, and set aside. Put Laughing Cow cheese, milk, and tomatoes into skillet over medium heat and whisk until cheese is melted and sauce is slightly thickened. Add more milk if you need to thin the sauce. Add chicken, broccoli and pasta to frying pan and combine. Serve with crushed red pepper and parmesan cheese if desired. Enjoy!

This is one of those meals that feels like a TON of food but the calories are crazy low! For 1/2 of this recipe, it is 287 calories (not including parmesan cheese). Now this is one filling and low calorie meal!
