Happy Monday everyone! This morning I got in an hour of yoga and a green smoothie, the best way to start out the morning, haha!
In an effort to try out new dinner recipes that get my husband to like vegetables, I tried out this new recipe this weekend: Snow Pea and Carrot Ginger Chicken.
It turned out really delicious, plus it satisfies my need for Chinese food without having to pay for take out! I had a meal very similar to this one at a Thai restaurant a week ago and had been dying to try to make it myself!
This recipe is super easy to make, and really quick. Plus it uses ingredients I usually have laying around anyway!
Snow Pea and Carrot Ginger Chicken
- 1 cup rice
- 2 medium chicken breasts, chopped
- 1 cup shredded carrots (or more!)
- 1 cup snow peas (or more!)
- 1/2 onion, chopped
- 2 tbsp soy sauce
- 1 tsp ground ginger
- 1 tbsp lemon juice
- 2 tsp brown sugar
- 1 tsp corn starch
- crushed red pepper to taste, optional
Put rice with 2 cups water in rice cooker, and cook. While the rice is cooking, spray frying pan with cooking spray and add onion, chicken, snow peas, and carrot. Stir fry until chicken is mostly cooked through and onions are tender. Whisk together remaining ingredients and pour sauce over stir fry. Continue to cook until chicken is cooked through and sauce is slightly thickened. Add water if sauce is too thick. Serve over rice, and enjoy!
This recipe makes two servings. When served over 1/2 cup rice, this is 268 calories. Yum!
