Peanut Butter Avocado Chocolate Pudding

Happy Tuesday!

This morning so far has been awesome- I did the 21 Day Fix Upper Fix video this morning, and followed that up with the Pilates video. That upper body video was pretty tough, my arms were jello afterwards which actually made the Pilates video hard! But it will be awesome when my arms are sore tomorrow! πŸ™‚

Last night I tried a recipe I had been wanting to try for weeks but just never got around to it- Peanut Butter Avocado Chocolate Pudding. My husband thinks it sounds gross, but y’all, it is SO GOOD.


This pudding is O-M-G-WHY-HAVE-I-NOT-BEEN-EATING-THIS-EVERY-DAY good.Β Now, I will say this is not low calorie. BUT it is very healthy for you and not full of a bunch of artificial stuff like the instant kind in a box. Not to mention the fact that is is DELICIOUS.

It’s thick, creamy and rich. Everything you want in chocolate pudding!

Peanut Butter Avocado Chocolate Pudding

  • 1/2 avocado
  • 1/3 banana
  • 3 tbsp peanut butter
  • 3 tbsp cocoa powder
  • 3 tbsp honey
  • 2-3 tbsp light almond milk (or any kind)
  • light whipped cream and peanut butter for topping

Blend all ingredients except toppings in food processor until smooth. Add more milk for easy blending if it’s not smooth enough. Put into two ramekins and cover tightly with plastic wrap. Place in refrigerator for a few hours or overnight. Top with light whipped cream and a few drops of warm peanut butter!

There are lots of natural low calorie whipped cream recipes out there and one of these days I might try some, but at this point I’m just too lazy and I buy the light whipped cream from the store, haha!

This pudding comes to 310 calories before toppings.Β Have an awesome week!

Taco Salad and Coconut Milk and Banana “Ice Cream”!

Good morning!

Since last week my workout schedule didn’t end in my losing any weight, I have decided this week to step my workouts up even more and work out for about an hour every day. Usually I only do this once or twice a week and the rest of the week I just work out about 30 minutes… honestly an extra 30 minutes a day is NOT that much of a hindrance to my usual schedule so I’m going to see if it helps! I know plateaus happen to lots of other people, so I am not letting this bug me. I am just seeing it as a challenge that will make me stronger and more fit! πŸ™‚ Yesterday I did 21 Day Fix Pilates and Lower Fix. I really enjoyed both, but I am VERY sore today!

I have lately become absolutely obsessed with black beans and corn together… can you believe before I went to Chipotle about a week ago I had never had them together??? Well I had a taco salad for lunch the other day, and it had: Lettuce, 1/2 cup seasoned hamburger, 2 tbsp light ranch, 1/4 cup black beans and corn, 1/2 chopped roma tomato, 5 crushed tortilla chips.

Last night I thought I would experiment with some coconut milk and banana ice cream. I found this recipe on Pinterest and thought I would give it a try since I had some coconut milk I didn’t know what to do with.

It turned out absolutely delicious! I think this will be in my freezer at all times now… it’s such a healthy tasty treat!

  • 5 coconut milk ice cubes
  • 1 1/2 frozen banana
  • pinch salt
  • pinch truvia
  • 1 tsp vanilla

Blend until smooth in a blender, and refreeze for a little bit if desired. Or eat straight from the blender! Mine came to 180 calories for an entire bowl full. SO. GOOD.

Mother’s Day and a Blueberry Watermelon Smoothie!

Happy Monday!

So, yesterday was Mother’s Day and I started the day out with a run and an upper body workout. I had planned on running 3 miles but I only ended up doing 2 because it was so hot and humid! I guess my body just isn’t used to it yet, it was a really challenging 2 miles for me! My upper body workout went great, I used 10 lb weights and I am really feeling it today. That sore feeling is the best, it lets me know I really pushed myself! πŸ™‚

For Mother’s Day I made my family and Garrett’s family a coconut cake with raspberry filling- and no this is not a healthy recipe!! You can find the recipe here.

But it was awesome! And like I often say, I think everything is ok in moderation. I only ate 1 piece, which is pretty great willpower for me. I spent the rest of the day with my mom and sister shopping for shoes for Sydni’s wedding! Is there a better way to spend an afternoon with your mom? I think not! But I am a bad daughter for not taking any pictures yesterday other than of my cake, haha! But this is a picture of us at my wedding 2 years ago!

This morning, since my arms are still super sore, I tried 21 Day Fix Lower Fix. That was tough! I really liked it though, I will be doing that one again for sure! I had a tough time walking down the stairs to get to work this morning after that workout!

Afterwards I had a blueberry watermelon smoothie, and it was one of the best ones I’ve made so far!

  • 1/2 cup 0% plain greek yogurt
  • 1 cup light almond milk
  • 1 cup frozen blueberries
  • 1/2 avocado
  • 1 cup frozen watermelon chunks
  • pinch truvia
  • 1/4 tsp vanilla
  • 1/2 scoop vanilla protein powder
  • 1/2 cup water
  • 2 ice cubes

Blend until smooth, and enjoy! This smoothie came to 409 calories. It was so delicious, I can’t believe I never thought to put blueberries and watermelon together before!

Saturday Weigh in and Chocolate Chip Banana Bread!

Good morning! I weighed myself this morning, not really expecting much. But I weighed 153 lbs! Since I weighed 156 earlier this week I’m more than a little surprised, but I’ll take it! πŸ™‚

Yesterday I got in a Jillian Michaels 6 Week 6 Pack video, and I really enjoyed it! I have decided that, backache or not, I need to get back into a challenging workout routine. And my back didn’t hurt at all! Yaaay! πŸ™‚

Yesterday I made this amazing chocolate chip banana bread- it was so delicious!

  • 1 3/4 cup all purpose flour
  • 1/4 cup oil (or milk, or applesauce if you want to cut calories)
  • 2/3 cup maple syrup
  • 2 cups mashed overripe bananas (this was 2 1/2 bananas for me)
  • 1/2 cup + 2 tbsp cocoa powder
  • 2 1/2 tsp vanilla
  • 1 tbsp vinegar
  • pinch truvia
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 tsp baking powder
  • 1/2 cup mini chocolate chips for batter, plus some for the top

Preheat oven to 350 and grease a loaf pan. In a large mixing bowl, whisk all wet ingredients. In a medium mixing bowl, whisk together all dry ingredients. Pour the dry ingredients into the wet ingredients and mix until combined. Pour into loaf pan, and sprinkle chocolate chips on top. Bake for 35 minutes, then shut off oven and leave bread to cook an additional 10 minutes. I let mine cool for about 10 minutes before taking it out of the pan. This makes 12 slices, and is 167 calories per slice if you use oil. Enjoy!

I had this for dessert last night and breakfast this morning with some scrambled eggs… I had to bring some of it to work so it won’t tempt me at home! It’s super delicious heated up with a little bit of butter also. Have a healthy happy weekend y’all! πŸ™‚

Healthy Chocolate Chip Cookies

Good morning! Yesterday I took another rest day… ugh I know, slippery slope! However, I got right back into working out this morning and I did the 21 Day Fix Total Body Cardio. I don’t know if this has happened to anybody else, but I think I really strained my lower back doing that video! Oh well, I strained my glutes when I started T25, so maybe it’s just going to happen occasionally when I’m really trying to train hard. I think some yoga will be on the agenda tomorrow for sure!

As I am trying to keep my blog as open and honest as possible, I have a confession to make:

I ate several chocolate chip cookies yesterday. And they were DELICIOUS! Yesterday I got a craving for something sweet, so I decided to whip up something that would satisfy my sweet tooth without making me feel icky afterwards. Plus, I had everything in my kitchen that I needed for this recipe. It doesn’t even call for eggs!

At about 70 calories a cookie, you can’t beat that with a stick. There were 10 cookies here… hmm…

Healthy Chocolate Chip Cookies


  • 1/3 cup plus 1/4 cup all purpose flour
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup mini chocolate chips
  • 2 tbsp brown sugar
  • 2 tbsp sugar
  • 1/2 tsp vanilla
  • 1 tbsp vegetable oil
  • 4Β tbsp milk (any kind)

Preheat oven to 375. Mix first 6 ingredients in a medium mixing bowl. Put in remaining ingredients and mix again. DropΒ cookies onto greased cookie sheet using a tablespoon, and bake for 6-7 minutes or until golden brown on the bottom. They will be slightly underdone when you pull them from the oven. Let cool on the baking sheet for about 3 minutes, and move to a cooling rack. Mine made 10 cookies.

Can you believe they’re only 70 calories each?! And believe me, they do not taste healthy at all. Have a healthy happy day y’all! πŸ™‚
