Saturday Weigh In, Eat Good Feel Good!


Happy Saturday everyone!

It’s been a while since I’ve done a Saturday Weigh In post so I thought I would update you guys. This morning I weighed in at 154, which is 1 lb less than last week. Yaaaay! 🙂 My goal is still to weigh around 135 and I haven’t gotten any closer to that goal in months. But I can say that I have kept off all the weight I’ve lost (about 20 lbs) so to me that is certainly a win. My short term goal is to be 149 or less by Thanksgiving, which for me is an attainable goal if I stay consistent with my workouts and nutrition.

I do have a bit of a confession, though. My goal originally was to count my calories using My Fitness Pal every day for a year. While I did keep that up until about 3 weeks ago, I have since only used My Fitness Pal to look up calories or to add them up for a recipe I have made. It was beginning to feel more like a chore and less helpful. I still have a vague calorie goal for each day, and I DO count my calories in my head. I can do that now because I have a very firm grasp on how many calories are in the food I eat, and I have finally created a habit to choose healthy foods over less nutritious ones without even thinking about it. Since I have stopped calorie counting, I also feel like I can listen to my body more. I am constantly asking myself “Am I hungry, or bored?” and “Am I full, or do I just want to finish what’s on my plate?” Eating mindfully is really important, and it’s something that I have always struggled with. But I’m getting better all the time! 🙂

If you are thinking about counting calories I would highly recommend it. If I hadn’t counted, there is no way I would have been able to lose the 20 lbs I have lost. Apps like My Fitness Pal also have things like sugar, fiber, protein, and vitamins so you can see how your nutrition measures up to what it should be. I would also say that over time it gets much easier to choose low calorie more nutritious food. Now I am really not satisfied by a meal that doesn’t have fruit or vegetables in it. I have realized that more nutritious foods fill me up faster, and leave me feeling more energetic and happier! I am a firm believer in “eat good, feel good” because it’s true! Not to mention the fact that these foods make you look good too!

Saturday Weigh In and a Blue Cheese Salad!

I have some WONDERFUL news. Well, maybe not to anyone else, but I am thrilled to say I lost 2 lbs this week! That puts me down to 151, the lowest I have weighed in a very long time. I haven’t been able to get below 152 since June, so this is a bit of a breakthrough. Since I started 21 Day Fix, I have worked out every day (10 days now). This was not as hard of a transition as I thought it would be, and I actually think it works for me to not take a rest day! With 21 Day Fix you have 5 days of tough 30 minute workouts and 2 active rest days, one with yoga and one with pilates and I am really enjoying it!

These past 10 days I have also been eating ridiculously healthy. Like, the healthiest I have EVER eaten in my whole life. And, truthfully, I think if you find the right recipes for you and can control cravings for unhealthy foods you can eat very clean and still feel satisfied. One of the major things that has helped me is my chocolate fudge protein bars. I have been eating these as preworkout snacks, and also afternoon snacks. Sometimes (if my calories permit) I’ve been eating 2 for a snack. They totally knock out my need for sweet things and chocolate at the same time! Plus, because of the black beans, they keep me full and hold me over until it’s time for a meal! Black beans are awesome because they’re a complex carbohydrate that give you energy for much longer than more processed ones.

One salad I had this week was a blue cheese salad!

This salad has: lettuce, croutons, 1/2 avocado, 2 tbsp blue cheese, 1/4 cup chickpeas, and drizzled with a little balsamic vinegar and olive oil. The blue cheese gives it amazing flavor, and the avocado and chickpeas make this a super filling salad. Yum!!

Last night I feel pretty awesome about the healthy choices I made. First, we went to a Mexican restaurant where there were virtually no healthy dishes to choose from, so I got the healthiest one they had! I got a grilled chicken salad in a fried shell, and it was actually really delicious!

Now, I did eat very healthy the rest of the day to give myself some extra calories for dinner. I only ate 1/2 of the chicken, I scraped off most of the cheese, and I ate all the veggies (there were tons under there, I promise). I ate some of the shell because it was delicious (duh!), but I didn’t eat any chips! Also I went to a birthday party after this and didn’t drink any alcohol or eat any cake!

Yaaaay for small victories! 🙂

Saturday Weigh in and Breakfast!

Good morning!

I weighed myself this morning and realized… I lost the 4 lbs I gained over the last few weeks. Wooohooo! I think it’s amazing how quickly that weight went away. Healthy food and plenty of exercise always win out, haha! I actually found myself missing my morning workout this morning ( always take Saturdays as rest days) so that’s always a good sign… I’m loving being back in my morning workout routine. Plus the weather is getting a bit cooler, which is amazing for long runs outside.

This morning I had a really quick and tasty breakfast!

This is a toasted whole wheat bagel with a little bit of light margarine, a fried egg and a piece of bacon. Such a filling and delicious meal for less than 400 calories! The rest of the day I’m planning on getting in plenty of fruit and veggies, because tonight I’m going to my sister’s wedding lingerie shower. I love to embarrass my little sister so tonight will be full of laughs for sure!!

4th of July and Dealing with Weight Loss Struggles!

Happy Monday!! Can I start by saying how amazing the US Women’s Soccer team was last night?! 4 goals in 15 minutes!!!

This morning it totally felt like a slow sluggish Monday morning, so thankfully Songza had a playlist for “A Case of the Mondays” that got me going at work, haha!

This past weekend I had 3 days off work with my husband, and that never happens! It felt like a mini vacation! We had lots of Garrett’s family in town this weekend because his granddaddy turned 90 and we had a party for him. Does he look anywhere close to 90 to you?!

His granddaddy is honestly the cutest man ever. He said at his party “I’ve had a life with everything I could ever want.” and he meant it. I feel like people like that are so rare and that philosophy is so hard to come by. Garrett’s family is very musical and they all play instruments and sing country music together! His granddaddy said he had always wanted to play at the Grand Ole Opry so his family put up a projector with the Grand Ole Opry in the background while he played… it was so sweet!

I can also say that the dress I wore to the party was one I haven’t been able to fit into in YEARS. Woop woop!

Saturday morning I weighed myself, and I was at 153, which is ok! I think I may still keep weighing myself every Saturday but unless there is a change I will probably not do a post. Every Saturday I used to be really excited and nervous about what the number on the scale would be, because I was working hard every day to lose that pound or two. Right now I still want to lose about 18 lbs, and I am not working hard toward that goal every day. I am really starting to find my motivation and inspiration again though!

I have had some real struggles with keeping up the motivation lately, I’m not going to lie. I could have a blog that consistently has me weighing 1 lbs less every week, but the truth is weight loss is hard. It is a daily struggle. I have lost weight before and gained it back, so I don’t have the best track record. I had a couple days where I was doing a lot of emotional eating and just feeling terrible mentally and physically.

I have moved past that I think, at least the emotional eating alone. There is still something in me that has trouble eating when I am actually hungry when I am with other people though! When I am with my family or friends, particularly at restaurants, sometimes I just decide to eat when I am definitely not hungry or I don’t make good choices. That is my goal in the future, to move away from overeating and making bad food choices because I feel pressured from other people. It can cause a snowball effect for me which is no good!

I have at least been keeping up my calorie counting. No, I have not kept my calories within my goal every day, or even most days. That is another goal for me this week! To stay below my goal every day, which is usually 1300-1400 calories a day.

Today I did about 40 minutes of yoga, which felt amazing!! I followed that up with a greek yogurt parfait with some fruit and granola- yum!

Yes, this journey is tough. Yes, it requires patience and hard work. But it is totally worth it!

Saturday Weigh In and Carrot Cake Baked Oatmeal

Happy Saturday!

I weighed myself this morning and, I am still at 152. That is ok with me because I am very proud of getting in a workout 6 days this week, that were all 45 minutes to an hour long! I think I could have eaten a little better this week, so that is my goal next week. I plan to keep getting in my workouts next week, and try my best to keep my calories as low as I can (comfortably) every day.

I made an awesome breakfast for myself this morning, and I think anyone would enjoy it! I made Carrot Cake Baked Oatmeal.

And it is delicious! And very different from what I usually have for breakfast. I often struggle getting in enough vegetables each day, and this is the BEST way to eat vegetables for breakfast! (Or at least it’s the tastiest!) Honestly I would eat this for a dessert any time, it’s that good!

Carrot Cake Baked Oatmeal


  • 1/2 cup old fashioned oats
  • 1/4 cup shredded carrrots
  • 1 tbsp vegetable oil
  • 1 tbsp raisins
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • pinch truvia
  • pinch salt
  • about 1/4 cup almond milk
  • 2 tbsp light whipped topping

Stir all ingredients together except whipped topping, and pour into greased ramekin. Press oatmeal mixture down into the milk, and if there isn’t enough milk pour in a little more. Put into cold oven and bake at 375 for 27 minutes or until golden brown on top. Let cool about 5 minutes, then top with light whipped topping. My oatmeal came to 361 calories. Enjoy! 🙂

This oatmeal is officially the best way to start off a Saturday morning!

Saturday Weigh In and Cake Batter Energy Bars!

Ya’ll, I am so excited to share this with you. I weighed myself this morning, and I have lost 1 lb this week! That puts me at 152 lbs, which is EXACTLY 20 lbs down from where I started at 172.

I was SO happy to see this on My Fitness Pal this morning! It seems to me that adding that extra 30 minutes or so to my workouts is really paying off! 🙂

Ok, now on to the food! I have made this bars at least 5 times, and I never get sick of them. They are a great pre-workout snack for me, because they have the perfect balance of protein and carbs to keep me full and give me tons of energy to get through my workouts.

PLUS they have sprinkles! It doesn’t get any better than that!

Cake Batter Energy Bars


  • 1 cup rice krispies
  • 1/4 cup + 2 tbsp oat flour*
  • 2 tbsp vanilla protein powder
  • 1/4 tsp salt
  • handful of sprinkles
  • 3 tbsp cashew butter
  • 1/4 cup + 1 tbsp honey

Combine dry ingredients in one bowl, and wet ingredients in a separate bowl. Pour dry ingredients into wet, and stir until combined. Place in a wax paper lined baking dish or tupperware container and put a sheet of wax paper on top of the mixture. Press mixture down into container until mostly flat, and refrigerate or freeze. Once hardened, cut into bars and keep in freezer or refrigerator. Makes 6 bars, and they are 140 calories a piece. Yum!

*To make your own oat flour, just put old fashioned oats in food processor until fine like flour.

Can I get a praise Jesus?! I have been stuck at 154 for weeks, so I am really hoping this plateau is over. Today I’m taking a rest day, as usual for Saturdays. This week I fully intend on getting in an hour long workout every day, and eating as healthy as I can to keep this ball rolling.

Saturday Weigh in and Skinny Banana Nut Pancakes

This past week I am, again, very proud of myself for working out every day I planned to and for staying within my calorie range all week! However, upon weighing myself this morning I saw that the scale hasn’t moved one bit… what a shocker!! I’m still at 154! Well, I’m just going to keep at it and I know good things will happen. 🙂

Yesterday I tried a new recipe for Skinny Banana Nut Pancakes, and they were AWESOME. These pancakes are: whole wheat, low calorie, sugar free, and oil free! But they are full of flavor and amazingness.

I know I hardly ever post recipes for dinner or lunch, most of them are breakfast! It’s my favorite meal of the day, and I often have it for dinner!

Skinny Banana Nut Pancakes


  • 1/2 mashed ripe banana
  • 1/4 cup light almond milk (or any kind)
  • 1/2 tsp vanilla
  • 1/3 cup whole wheat flour
  • pinch salt
  • 1/2 tsp baking powder
  • 2 tbsp nuts, 1/2 sliced banana, 1/4 cup sugar free syrup for topping (optional)

Combine first 3 ingredients in large bowl, set aside. Combine flour, salt, and baking powder in a small bowl, and then pour into banana mixture and stir. Add more milk if needed. Heat greased frying pan over medium heat and cook pancakes until dry on edges. Flip and cook until done. Top with pecans or walnuts, banana, and syrup!

This whole recipe came to 375 calories, that’s including everything I put on my pancakes too! Plus they’re super easy with very few ingredients. These will be a staple at my house from now on!

Saturday Weigh in and Oatmeal Chocolate Chip Pancakes!

Good morning!

After last night’s pizza and beer celebrating Garrett’s birthday, I was a little worried about getting on the scale this morning. I weighed myself and…. 154. *angry face*

After a full week of working out hard and eating healthy, I have decided not to let this number bother me. It’s just a number, after all. It does not signify my worth, and it does not make me a failure that it is not going down! I know that if I keep at it, challenging myself with my workouts and eating healthy food the weight WILL come off. I am just not going to worry about it! 🙂

This morning I have an awesome recipe for you! I woke up wanting something filling, and I had plenty of time since I woke up early (I usually make Saturday a rest day so no work out!). I tried a recipe from Chocolate Covered Katie for Oatmeal Chocolate Chip Pancakes!

  • 1/3 cup all purpose flour
  • 1/3 cup old fashioned oats
  • 1/2 tsp vanilla
  • pinch truvia
  • pinch salt
  • 1 tsp baking powder
  • 1/2 cup of water (or milk)
  • chocolate chips

Mix all dry ingredients, then add in wet and stir. Heat a greased frying pan to medium heat and cook batter, flipping when one side is done and continue to cook until golden brown on both sides.

I had mine with cream cheese mixed with vanilla and truvia, but these would be good with syrup also! To eat this entire recipe is 348 calories (not counting the cream cheese I ate mine with), and these pancakes are extremely filling!

Saturday Weigh in and Healthy Cinnamon Roll Pancakes!

This morning I weighed myself and… I weighed 154 lbs. Not gonna lie, I seriously wanted to put up here that I had lost something, but nope. I have been yoyoing around this weight for about 3 weeks so I’m thinking I need to change something up to get back to losing weight again. This week I worked out 3 times instead of the usual 6, and honestly I think I will feel a bit deprived if I narrow my calories down very much. SO, my plan coming up this week will be stepping up my workout regimen, and staying below my calorie count every day. I have been staying around 1500 calories every day, some days less and some days a little more. I do not think that this is bad, I just think maybe I need to be burning more calories in my workouts than what I am currently doing.

I think the days of easy weight loss are over for me- most of my life I have been around 155 lbs so if I want to weigh less than that, I will need to do something new. Tonight I’m going to come up with a workout schedule for the week and I’ll post it soon!

Aaaaand on to the recipe! Last night for dinner I was feeling adventurous and thought I would try out a cinnamon roll pancake recipe that I found here. Y’all, these are SO delicious.

Seriously, I think these are the best pancakes I’ve ever eaten, at IHOP or at home!

And the best part is, I didn’t totally wreck my day of healthy eating! Instead of making 20 or so silver dollar size pancakes, I made 4 medium size ones. I ate two of those pancakes with cream cheese frosting, making my dinner about 400 calories. Similar pancakes from IHOP are 900 calories!

Ingredients for Filling

  • 1 cup dates
  • 1/4 cup milk (any kind)
  • 2 tsp cinnamon

Ingredients for Pancake Batter

  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • pinch truvia
  • 1 cup milk (any kind)
  • 2 tbsp vegetable oil
  • 2 tsp vanilla

Put filling ingredients in food processor and blend until very smooth, this took me about 5 minutes of blending. I actually chopped my dates first and then blended them, but you may not need to. You may need to add more milk to get the dates smooth. Put the mixture into a plastic bag and squeeze all the air out. Snip the end of the bag off to make a piping bag. Set aside while you make the pancake batter.

To make the batter, mix all dry ingredients in a small bowl. Mix all wet ingredients in a medium bowl. Add dry to wet, and stir until combined. Get a frying pan to medium high heat, then lower heat to medium and pour pancake mix onto greased pan. Immediately pipe the date mixture onto the pancake, and cook until the edges look dry. Flip and cook an additional minute. *Note- the date mixture burns very fast so keep an eye on it!

You can serve these with syrup, or with cream cheese frosting. To make my frosting, I heated up 1 oz of cream cheese and mixed it with a little truvia and vanilla. Yum!

I enjoyed these pancakes while I watched the season finale of Vampire Diaries… and I cried the WHOLE TIME. Ugh, Vampire Diaries, you know how to pull on my heartstrings. Does anybody else watch that show? Did you cry like a baby too?!
