Happy Saturday everyone!

Half Marathon training has been going well for the most part. I had to rearrange my runs a lot this week due to the truly awful weather we’ve been having! 70 degrees and sunny one day, 30 degrees and snowing the next. Welcome to North Carolina, haha!

That being said I did get in a great 2 miles this morning!

It was clear and bright, and cold!

Lately my favorite breakfast has been boiled eggs, berries, and honey.

As the scale has not moved down in quite a while, I have been trying to cut down my calories a bit in breakfast. In addition, I am totally cutting out snacking after dinner. The rest of the day I am great at making healthy choices. But once dinner is over, it’s like my brain goes “Hey, let’s eat the rest of what’s in the house. Whaddya say?!” So I am shutting that DOWN. After my run, I did a quick 10 Minute Abs 21 day Fix video, and MAN that had my abs burning!!!

After my workout, I had a pineapple green smoothie!

My lastest obsession: coconut water. Yeah I know I’m late to the party, but seriously they make smoothies taste SO much better! It adds flavor and plenty of healthy goodies like potassium!

Pumpkin Protein Smoothie!

Happy Friday everyone!!!

Lately I have been really lacking inspiration for recipes. I know, I know! Fall is the perfect time for inspiration for tons of things, and believe me I have been gettin’ my run ON. I have been running my little butt off, and so has my husband! On Sunday we ran 4 miles together, I am so proud of him! We’re training for a 10K on Halloween so I am super pumped about that.

I have been back to my regular routine working out 7 days a week. Believe me, no one is more surprised than I am that working out every day of the week works for me. A couple of months ago I would have told you it was crazy! But it actually helps me balance eating the things I want and keeping my body active and healthy. Plus it gives me a little extra “me” time that I would normally have just spent sleeping anyway!

This morning I tried this pumpkin protein smoothie, and even my husband liked it! (He hates my healthy smoothies, haha!)

Y’all, this is like drinking pumpkin pie without the crust. It is SO delicious, I think I’m going to keep pumpkin on hand all the time for when I get a hankering for it again!

Pumpkin Protein Smoothie

  • 1 frozen banana
  • 1/2 cup plain 0% greek yogurt
  • 1/4 tsp vanilla
  • pinch Truvia
  • 1/4 tsp cinnamon (I also sprinkled a little extra on top)
  • 1/4 tsp pumkin pie spice
  • 2/3 cup pumpkin puree
  • 1/2 cup almond milk
  • 2 tbsp maple syrup
  • 5 ice cubes

Blend everything until smooth, about 2 minutes. You can easily change this recipe to suit your needs- add protein powder or use skim milk for more protein. Add more ice if you want this thicker, add more milk or water if you want it thinner. My smoothie came to 330 calories! The original recipe said this makes 2 servings or one monster smoothie… I think we can all agree I am the monster smoothie type!!

Ruby Red Smoothie!

So, the other evening I had some extra time on my hands (which doesn’t seem to happen all that often any more) and I plopped myself in front of Netflix. I discovered my newest obsession: Death Comes to Pemberley.

Has anyone else discovered this show?! It’s only 3 episodes but it was amazing! I REALLY hope they do another season!

The last couple of weeks I have been trying to make new recipes with veggies I rarely eat. This week I made myself a Ruby Red Smoothie with beets! I know, that sounds kindof disgusting. But it’s totally not!

This smoothie tastes like pomegranate, raspberries, and banana. It’s absolutely delicious, plus it has tons of health benefits!

I had no idea beets had so many- they have antioxidants, detoxify the blood, help maintain healthy sex drive, AND boost endurance and muscle recovery! I am definitely going to try to find new ways to get beets in my diet on a regular basis. As a side note, I did have to roast a beet for this recipe. To do this is very simple! Just put the washed beet in a foil packet on a baking sheet, and stick it in a 375 degree oven for 45-60 minutes until tender. Let cool, and then peel. The peel will just fall off, super easy! Though I will give you a tip- you should probably wear gloves because they can really stain your hands.

  • 1/2 tsp chia seeds
  • 1/2 scoop vanilla protein powder
  • 1/3 cup plain greek yogurt
  • pinch truvia
  • 1/4 cup POM juice
  • 1/3 cup water
  • 1/2 roasted beet, chopped
  • 3 frozen strawberries
  • 1/4 cup frozen raspberries
  • 1/4 frozen banana
  • 4 ice cubes

Blend everything on a low speed until smooth. Be careful not to over blend or it will get foamy! This smoothie comes to 294 calories! Enjoy! 🙂

Green Smoothie Breakfast Bowl and Some Yoga!

It’s Saturday!!!!!!! I hope you are having as blissful a morning as I am!

I am still freaking SORE from my elliptical workout the other day, doing that the day before starting 21 Day Fix may not have been one of my best ideas, haha! I was supposed to do Lower Fix today, but I decided to listen to my body and switch a couple days around on my calendar this week. I did about 45 minutes of yoga instead, because my upper body and lower body both needed some serious stretching. Afterwards my soreness was considerably better! It’s funny, I initially thought I was doing an easy yoga video but it really ended up ramping up halfway through, but it was good and I got my sweat on! 🙂

After my workout, I made a Green Smoothie Breakfast Bowl. It was delicious!

I love how I can get all the healthy stuff from my green smoothie but also feel like I’m eating a meal and getting to add fun toppings!

  • about 2 cups spinach
  • 1/4 cup plain Greek yogurt
  • 1 cup almond milk
  • 1/2 scoop vanilla protein powder
  • 1/2 cup frozen mango (mine was over ripe and the best thing I could think to do with it was a smoothie!)
  • 1/2 avocado
  • pinch truvia
  • 2-3 icecubes
  • I topped mine with- 1 tbsp granola, sliced strawberries, and 1/2 tsp chia seeds

Blend everything together and pour into a bowl, top with your favorite toppings! The possibilities are endless, you can customize it completely to your taste. My bowl came to less than 400 calories! Want another smoothie bowl recipe? Check out my dragonfruit smoothie bowl.

Creamsicle Protein Shake and a Run!

Yesterday here in NC was HOT, so I woke up early to get a run in. I set my alarm for 5:45 but… yeah that didn’t happen, haha! I ended up getting to the track around 7:15 and by then it was already heating up. I got in a 3 mile run, and since it was so humid I was pretty slow.

But I am very proud of myself for sticking to 3 miles even though it was hot and uncomfortable, I know it was great for my body to train in the heat!

After I got back I did an upper body workout, and then made myself a Creamsicle Protein Shake!

And it was SO delicious. I was all out of avocados and bananas so I thought I would change up my smoothies this week.

  • 1/2 scoop vanilla protein powder
  • 2 cups frozen peaches
  • 1 cup almond milk
  • 1/2 cup water
  • 1/2 cup plain greek yogurt
  • pinch truvia
  • 1/4 tsp vanilla

Blend until smooth, and enjoy! Perfect for post workout on a hot and sweaty day! 🙂

Mother’s Day and a Blueberry Watermelon Smoothie!

Happy Monday!

So, yesterday was Mother’s Day and I started the day out with a run and an upper body workout. I had planned on running 3 miles but I only ended up doing 2 because it was so hot and humid! I guess my body just isn’t used to it yet, it was a really challenging 2 miles for me! My upper body workout went great, I used 10 lb weights and I am really feeling it today. That sore feeling is the best, it lets me know I really pushed myself! 🙂

For Mother’s Day I made my family and Garrett’s family a coconut cake with raspberry filling- and no this is not a healthy recipe!! You can find the recipe here.

But it was awesome! And like I often say, I think everything is ok in moderation. I only ate 1 piece, which is pretty great willpower for me. I spent the rest of the day with my mom and sister shopping for shoes for Sydni’s wedding! Is there a better way to spend an afternoon with your mom? I think not! But I am a bad daughter for not taking any pictures yesterday other than of my cake, haha! But this is a picture of us at my wedding 2 years ago!

This morning, since my arms are still super sore, I tried 21 Day Fix Lower Fix. That was tough! I really liked it though, I will be doing that one again for sure! I had a tough time walking down the stairs to get to work this morning after that workout!

Afterwards I had a blueberry watermelon smoothie, and it was one of the best ones I’ve made so far!

Ingredients

  • 1/2 cup 0% plain greek yogurt
  • 1 cup light almond milk
  • 1 cup frozen blueberries
  • 1/2 avocado
  • 1 cup frozen watermelon chunks
  • pinch truvia
  • 1/4 tsp vanilla
  • 1/2 scoop vanilla protein powder
  • 1/2 cup water
  • 2 ice cubes

Blend until smooth, and enjoy! This smoothie came to 409 calories. It was so delicious, I can’t believe I never thought to put blueberries and watermelon together before!

Morning Run, Chocolate Raspberry Smoothie and Trail Mix!

Good morning! I went for a 3 mile run this morning, and I have a little secret.

I really REALLY didn’t want to.

But I put my big girl pants on, and went out anyway. I wore my half marathon shirt from November, and was pleased to see that it was A LOT looser than when I ran in it, so that gave me a little boost to get my butt going! I got caught in a light drizzle around mile 1, and by the end of mile 2 I was in a downpour! At first I really enjoyed it, but by the end I was very cold, and very wet!

After my run I had a delicious Chocolate Raspberry Smoothie! As always you can change the fruit for something else- I have had this with strawberries or cherries instead of raspberries. They’re all good!

Ingredients

  • 1/4 cup plain greek yogurt
  • 1/2 scoop chocolate protein powder
  • 1 tbsp cocoa powder
  • pinch truvia
  • 1 cup raspberries
  • 1 cup light almond milk
  • 1/2 frozen avocado
  • 2 cups spinach
  • 1/2 cup water

Blend until smooth and enjoy! I LOVE this smoothie because it’s so rich and creamy- one of those smoothies that honestly don’t taste healthy. It tastes like dessert! It’s almost 400 calories, so it’s kindof a lot. But it’s full of awesome things like fiber, protein, and calcium to keep me going the rest of the day.

Last night I made some trail mix for mine and Garrett’s road trip coming up. I know there are tons of trail mixes out there but I never like them! They’re always mostly peanuts and I don’t like peanuts that much, so I made my own!

I mixed together: 1 cup M&Ms, 1 cup raisins, 1 cup cashews, and 1 cup Bare Naked Vanilla Granola. Per 1/4 cup serving, this is 158 calories.

I realize this isn’t super healthy, but to me it is much better than eating a lot of junk food. Typically on a road trip, I would have loaded up on crackers, chips or oreos. When shopping for road trip food last night, I think I had A LOT of restraint not getting snack cakes and cookies instead of granola and nuts!

At least I know a serving of this will keep my husband and I full and not reaching for something like a candy bar or chips!
